Looking for an easy snack you can make ahead and enjoy throughout the week? These Pumpkin Oat Energy Bites are just the thing! Not only are they simple to make, but they’re also very satisfying. It’s the perfect balance of healthy fats, protein, and carbohydrates to keep you fueled in between meals.

Parisian Pastry Seasoning Blend | The Nutrition Adventure

I used the Parisian Pastry Seasoning Blend from JM Thomason Spicy Company in this recipe because it has all of the right spices for pairing with pumpkin and pecans. The Parisian Pastry Seasoning Blend works well in most baking, really, since it’s a combination of cinnamon, ginger, nutmeg, cardamom, and brown sugar. Add it to quick breads, pies, or even french toast!

This recipe comes together easily in a food processor. Do you depend on your food processor as much as I do? I have a KitchenAid 7-cup Food Processor and it’s definitely one of my most used kitchen appliances! They’re great for making hummus, homemade nut butters, pesto, and dicing or slicing fruits and veggies.

Since the Parisian Pastry Seasoning has brown sugar in it, I didn’t’ want to add much more additional sugar. The dates and chocolate chips add just enough additional sweetness to these energy bites without being too sweet.

For a fun crunchy coating, I chopped pecans and coconut chips together with a touch more of the Parisian Pastry Seasoning. It’s so good!!

Pumpkin Oat Energy Bites are easy to make ahead and to keep on hand as a snack to enjoy throughout the week!

Ingredients

  • 2 1/2 cups quick oats
  • 1 cup almond butter
  • 1 cup pumpkin puree
  • 2 tablespoons Parisian Pastry Seasoning Blend see Notes
  • 3 pitted dates
  • 2 teaspoons dark roast coffee grounds
  • 1 teaspoon chia seeds
  • 1/2 cup mini dark chocolate chips

Pecan Coating:

  • 2 cups pecans
  • 1/2 cup unsweetened shredded coconut or coconut chips
  • 2 teaspoons Parisian Pastry Seasoning Blend

Instructions

  • 1. In a food processor, combine the quick oats, almond butter, pumpkin puree, Parisian Pastry blend, dates, coffee, and chia seeds. Process on high until smooth.
  • 2. Pour the mixture into a bowl and add mini chocolate chips. Mix until evenly distributed. Place bowl in the refrigerator for 15 minutes.
  • 3. Meanwhile, line a baking sheet with parchment paper. Wash and thoroughly dry the food processor bowl. Make the pecan coating in the food processor by combining the pecans, coconut, and Parisian Pastry spice. Process until finely chopped. Pour the pecan coating onto a plate.
  • 4. Remove the oat mixture from the refrigerator. Use a tablespoon measure to scoop out the mixture and roll in hands to form a ball. Roll the ball into the pecan coating before placing onto the baking sheet. Repeat this until all of the oat mixture has been used.
  • 5. Keep the energy bites in the refrigerator for up to 4 days.

Notes

To substitute for the Parisian Pastry spice, use the following:
1 tablespoon maple syrup, 1 tablespoon brown sugar, 1 teaspoon cinnamon, 1/4 teaspoon ground ginger, 1/4 teaspoon nutmeg, 1/4 teaspoon cardamom
