Garlicky Ricotta Pasta

Yield: 4 servings

Ingredients

2 cups dry whole-wheat fusili pasta

1 teaspoon olive oil

2 cubes Dorot crushed garlic

1/3 cup finely diced white onion

1/3 cup diced red bell pepper

10 ounces ground beef + lamb blend (or you can use 93% lean ground beef only)

1/2 teaspoon dried oregano

1-14.5 ounce can drained diced tomatoes with basil, garlic, and oregano

1 cup sliced mushrooms

2 cups baby spinach leaves

1/8 teaspoon salt

3 tablespoons part-skim ricotta cheese

1/4 cup shredded Parmesan cheese

1. Cook pasta according to package directions. Drain and set aside.
2. While pasta is cooking, heat olive oil and Dorot crushed garlic in a large skillet over medium heat for 1 minute. Add the onion and bell pepper and cook for an additional minute. Push the vegetables to the outside edge of the pan, making a empty space in the skillet to add the meat.
3. Reduce the heat to medium-low and add the ground meat and oregano, cooking until meat is no longer pink and breaking into small pieces with a spatula.
4. Once the meat is cooked through, remove the pan from the heat and remove as much grease as possible. Place skillet back on burner and add the diced tomatoes, mushrooms, spinach, and salt, stirring well. Cook for 5 minutes over low-heat.
5. Add the ricotta and Parmesan cheese to the meat and vegetables and mix well until incorporated. Turn off heat and add in the cooked pasta, stirring to coat.
