March is National Nutrition Month and this year’s theme is “Put Your Best Fork Forward”. This theme is a great reminder that each day, and even at every meal, we have the opportunity to make healthier choices. Small changes today can lead to long-term results and healthier habits in the future.

So, how will you “Put Your Best Fork Forward” today? I’m starting my day of a cup of matcha tea (read more about matcha powder in this post) and a bowl of oatmeal!

Today, I’m excited to share about the new 4-Ingredient Diabetes Cookbook from cookbook author, Nancy S. Hughes and the American Diabetes Association. Plus…there’s a chance to win a copy of the cookbook at the end of this post! What better way to welcome Friday and kick-off the weekend than with a giveaway?!

The 4-Ingredient Diabetes Cookbook | The Nutrition Adventure

What I love most about this cookbook is that Nancy shows us that delicious, nutritious food doesn’t have to be complicated. With 4 ingredients or less, you can create nutrient-rich dishes at home. Cooking often at home is associated with consuming fewer calories and carbohydrates, less sugar, and less fat than rarely cooking at home or not at all. And not to mention the money you’ll save from not dining out several times a week!

Even if you currently feel like you don’t enjoy cooking or being in the kitchen, I encourage you to try a simple recipe that takes less than 20 minutes and a few basic ingredients. You might be surprised at how easy cooking can be and the results of your efforts! As I shared at the beginning of the post, a small change today can lead to long term habits 🙂

Each of the recipes in the cookbook include the approved meal exchanges from the American Diabetes Association and nutrition info. With 160 recipes, this 2nd edition cookbook is a great resource for anyone looking to prepare simple and delicious recipes at home. While all of the recipes are diabetic-friendly, I’m sure anyone would enjoy recipes like the ones below:

  1. I’m most excited to try the SRIRACHA-ROASTED PORK WITH SWEET POTATOES . I love pork, but haven’t had much success with cooking it at home, so I pretty much just eat it when at a restaurant. It would be great if this turns out well.

    1. I really hope you’ll give the recipe a go at home, Annette! As mentioned in the recipe, be sure to let it rest after roasting so all the juices stay inside the pork before slicing. Thanks so much for commenting 🙂

  2. Seriously…all of these recipes look amazing! I think the pancakes are going to be the first to try, but my family would love the roast pork, too! And peanut butter anything is my favorite!! I’m torn! 🙂
