Brisket Burgers with Comeback Cabbage Slaw

Okay, back to the burger! My recipe for Brisket Burgers with Comeback Cabbage Slaw is inspired by the Nashville-created group, Kings of Leon and their song, Comeback Story. The song title made me think immediately of Comeback Sauce—the creamy, slightly spicy sauce that is quite popular in the Southern states. My recipe for Comeback sauce is a lightened-up version and it’s mixed in with a cabbage slaw that’s used to top these tasty brisket burgers.

When it comes to burgers, beef burgers are what I always choose! Nothing beats the flavor of beef, plus beef is protein-rich, satisfying and contains 10 essential vitamins and minerals like vitamin B12, iron, zinc and niacin, in just a 3-ounce serving. I love it when I can get good nutrition in such a delicious recipe like this.

For this recipe, beef is definitely the centerpiece but beef is a versatile protein that can be used in a variety of recipes like tacos, salads, pasta, and even breakfast dishes. As a dietitian, I enjoy beef often and include it as part of a balanced, healthy diet alongside veggies, fruits, whole grains, and dairy foods. There are lots of great, lean beef cuts to choose from and nothing quite compares to the satisfying taste of beef.

Comeback Sauce is a recipe that originated in Mississippi but is commonly used throughout the South, being served on sandwiches or as a dipping sauce. It’s mayonnaise-based, but I’ve lightened it up by using plain Greek yogurt to replace half of the mayonnaise and swapped out regular mayo for an olive oil-based mayonnaise. This Comeback Sauce recipe also includes ketchup, Dijon mustard, paprika, and for some heat, a little bit of sriracha sauce and cayenne pepper.

Of course, we can’t forget the veggies! This brisket burger is topped with a cabbage slaw made from Napa cabbage, carrots, and cilantro, mixed with the Comeback Sauce. Grilled red onion is the perfect addition to this simple burger and complements the juicy, umami flavors in the burger and the cabbage slaw dressed in the Comeback Sauce.

Holding everything together is a grilled whole wheat burger bun. It’s always great to add in whole grain foods whenever you can for an additional boost of fiber in the day, and these hearty wheat buns can stand up to all of the components of this burger. Brisket Burgers with Comeback Cabbage Slaw

Ingredients

Brisket burgers:

  • 1 lb. ground brisket
  • 1 lb. 90% lean ground chuck
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 8 slices red onion sliced ½-inch thick
  • 8 whole wheat hamburger buns

Comeback Sauce:

  • ¼ cup plain low-fat Greek yogurt
  • ¼ cup reduced fat mayonnaise with olive oil
  • 2 tablespoons ketchup
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika
  • ½ teaspoon sriracha
  • ¼ teaspoon cayenne pepper

Cabbage Slaw:

  • 4 cups shredded Napa cabbage
  • 1 cup shredded carrots
  • 1/3 cup chopped cilantro
  • Comeback sauce recipe above

Instructions

  • 1. In a large bowl, combine the brisket, ground chuck, salt and black pepper. Form into 8 equal-sized patties. Set patties aside while you prepare the Comeback sauce and slaw, or place refrigerator if waiting more than 30 minutes before cooking.
  • 2. Prepare the Comeback sauce by mixing the Greek yogurt, mayonnaise, ketchup, Dijon mustard, paprika, sriracha, and cayenne pepper together in a small bowl. Set aside.
  • 3. In a large bowl, toss together the Napa cabbage, carrots, cilantro, and Comeback sauce. Toss well to combine.
  • 4. To prepare burgers, cook patties either on a grill or in a skillet over medium heat, flipping after about 5-7 minutes. Drizzle a small amount of olive oil over each red onion slice and add to the grill once the burgers have been flipped. Add the hamburger buns at this time and continue cooking the burgers, red onion, and buns for 5 minutes, or until the burgers reach an internal temperature of 160 degrees Fahrenheit. Remove the items from the grill and place onto a clean plate or tray.
  • 5. To assemble the burgers, place the red onion slices on the bottom bun, top with a beef patty, add slaw and top bun.
