Holiday Popcorn

I tend to be one of those people who do things at the very last minute, on a whim. Sometimes it doesn’t turn out well, but in this case, I’d say it turned out VERY well. Failing to find suitable gifts for my co-workers just four days before Christmas, I decided to raid my pantry for inspiration so I could make something homemade instead. What I found: popcorn, spices, butter, and dried cranberries. End product: Holiday Popcorn…a tasty snack that packs up nicely in a decorative, Christmas tin or treat bag. So if you’re like me and scrambling to come up with something for co-workers, family members, or a holiday party pitch-in, popcorn may be the answer!

 

Holiday Popcorn

Yield: 7 servings

Serving Size: 2 cups

Ingredients

2 tablespoon coconut oil

1/2 cup popcorn kernels

6 tablespoons unsalted butter

1/3 cup sugar

2 teaspoons cinnamon

1/4 teaspoon nutmeg

3/4 cup dried cranberries

1. In a heavy-bottom stock pot, heat oil over medium heat. Once oil is hot, add popcorn kernels. You can test the temperature of the oil by adding a single kernel--it should pop immediately if the oil is ready.
2. Cover pot with lid, being sure to leave it slightly ajar. Pop kernels over medium heat. Once popping starts to slow, remove pot from heat and leave lid on until popping has finished.
3. Melt butter in saucepan over medium heat. Add spices and mix until combined. Place popcorn in a large bowl and pour melted butter on top. Toss well to coat. Mix in dried cranberries.
4. Spread popcorn into an even layer on a baking sheet to dry. Package popcorn in treat bags or place in an airtight container. 2 cups=one serving
