Kale & Bacon Scramble Bowl

Enjoy a healthy serving of vegetables at breakfast with this Kale & Bacon Scramble Bowl!

Start your day off the right way with a hearty breakfast bowl filled with nutrient-rich kale and protein-packed eggs and bacon. Protein is essential at meal times to help keep you feeling satisfied and to prevent snacking/over-eating. And how often do you eat vegetables for breakfast?! According to the 2010 State of the Plate study from the Produce for Better Health Foundation, Americans continue to under-consume vegetables (and fruits), despite being aware of the health benefits of eating fresh produce. Kale is an excellent source of vitamin A and C (both important for immune function) and a good source of calcium and potassium. Don’t like kale? That’s okay, just sub in spinach or broccoli. Bump up the veggies even more by adding mushrooms, bell peppers, carrots, or whatever your heart desires!

To cut back on prep time, you can cook a package of bacon ahead of time, crumble into bacon bits, and then keep in the refrigerator until ready to use.

 

Kale & Bacon Scramble Bowl

Yield: 2 servings

Ingredients

6 slices bacon

1/2 small onion, diced

1 garlic clove

4 cups kale, rinsed and torn into pieces

4 eggs

1 Tbsp. 2% milk

Salt & Pepper to taste

4 thin slices of smoked Gouda cheese, or preferred cheese

1. In a large skillet, cook bacon over medium heat until crispy. Remove grease from bacon by placing on a plate lined with a paper towel. Reserve about a tablespoon of bacon grease in the skillet.
2. Add onion to skillet with the bacon grease and cook over medium heat until translucent, then add garlic.
3. Place kale on top of onions and garlic, and cook until wilted, about 5 minutes.
4. In a small bowl, whisk together eggs and milk. Then pour into the skillet with kale, stirring until eggs are set. Season with salt and pepper to taste.
5. Place kale scramble into serving bowl and top with cheese slices.
