Hey guys! It’s Recipe Redux time, and this month is extra delicious as we’re sharing small bite desserts to celebrate the 6th birthday of Recipe Redux!

These Matcha Almond Cookies are about three small bites for most, one BIG bite for some 😉

I’m a major matcha fan. Have been for a while now, so I’m definitely loving that matcha has gone mainstream and more coffee shops are starting to serve it. Have you tried it?

Matcha is a type of green tea from Japan. What sets it apart from other green teas is that it comes in powder form—the entire tea leaf is ground. The matcha powder is typically whisked into hot water for traditional matcha tea or it can be combined with milk to make a latte. Matcha contains at least three times more epigallocatechin gallate (EGCG) than other green teas, and because the entire tea leaf is being consumed, we reap all of those benefits. EGCG is a polyphenol that scientists have studied for its potential anti-cancer and anti-viral properties.

The taste of matcha is vegetal and earthy. It’s important to search for culinary-grade matcha for a better-tasting product. Baking with matcha has been on my to-do list ever since I ordered a one-pound bag of it! Cookies were first up on the list of things to bake. The color of matcha is gorgeous….do you think there’s a paint color named after matcha yet? I definitely want to paint a wall in matcha 🙂Matcha Almond Cookies | The Nutrition Adventure

The cookies are made with gluten-free flour, almonds, and are lightly sweetened with honey. Matcha and white chocolate are a matcha made in heaven 🙂 You can easily swap out the gluten-free flour for all-purpose flour if desired.

These Matcha Almond Cookies are best served with a nice, cold glass of milk. Cookie cheers, y’all!

 

Matcha Almond Cookies

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Servings: 16 cookies

Ingredients

  • 1 cup gluten-free flour or all-purpose flour
  • 1/2 cup finely ground almonds about 1/2 cup whole, raw almonds
  • 2 tablespoons unsweetened coconut shreds
  • 1 tablespoon matcha green tea powder
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 large egg
  • 1/4 cup extra virgin coconut oil melted
  • 2 tablespoons honey
  • 1/4 teaspoon coconut extract
  • 1/2 cup white chocolate chips

Instructions

  • 1. Preheat oven to 350 degrees F. Line a baking sheet with a silpat or parchment paper.
  • 2. In a large mixing bowl, whisk together all of the dry ingredients until combined.
  • 3. In a small mixing bowl, whisk together the egg, coconut oil, honey, and coconut extract. Pour the liquid into the dry mixture and stir just until combined, being careful not to over mix.
  • 4. Using a small scoop, form 1-inch balls with the dough and gently press flat onto the baking sheet. The cookie should be about a 1/2-inch thick. Bake in the oven for 8-10 minutes. Remove cookies from oven and place on a cooling rack to cool completely.
  • 5. While cookies cool down, melt the white chocolate in a small microwavable bowl. Once melted, add the chocolate to a small, resealable plastic bag and cut a small corner off one side of the bag to make a piping bag. Drizzle the chocolate over each cookie and allow the chocolate to set before serving or storing.
