Blueberry-Pecan Pancake Mix

This Blueberry-Pecan Pancake Mix is a simple homemade food gift to give loved ones!

A couple years ago, a friend of mine and I sold homemade, packaged foods at Porter Flea in Nashville as part of our side hustle, Oh My Nosh. One of our creations was a pancake mix in a jar, which is super easy to put together and is healthier than most pancakes mixes you’ll find at the local grocery store.

Just in time for the holiday season, the Recipe Redux crew has decided to compile our favorite foods in jars that make for perfect gifts. Impress friends and family with your DIY skills this year and give a little love from your kitchen!

Blueberry-Pecan Pancake Mix

Ingredients

1- 8 oz glass jar

3/4 cup white whole-wheat flour

1/2 cup quick oats

1 tsp cinnamon

1 tsp salt

1 tsp baking powder

1/4 tsp baking soda

1/8 tsp salt

1/4 cup pecans, chopped

1 Tbsp ground flax seed

1/8 cup dried blueberries

1. In a small bowl, mix the flour, oats, cinnamon, salt, baking powder, baking soda and salt together with a whisk.
2. Using a spoon, add flour mixture to the glass jar, then add pecans, ground flax seed and dried blueberries in layers.
3. For a more decorative look, add two cinnamon sticks on top. Be sure to include instructions (see below) for making the pancakes on a small gift tag and attach it to the jar.
*To make pancakes: Add pancake mix to a medium-sized bowl and add 2 eggs, 1 tsp. vanilla, and 1/2 cup + 2 Tbsp. milk or milk alternative. Stir until just combined, being careful not to over mix.
