Roast Beef & Whipped Feta Toast

 A simple, spring-inspired and Mediterranean-style recipe that’s perfect for sharing!

Welcome to this month’s Recipe Redux post! We are keeping the recipes simple this month with seven ingredients or less because it’s tax season and who needs any extra stress? Simple is just better sometimes, ya know? This Roast Beef & Whipped Feta Toast certainly fits the bill.

The other week, I tried the new Butcher & Bee with some friends, which focuses on sandwiches and Mezze cuisine (Mediterranean small plates). I’m convinced that this style of eating, ordering several small dishes so everyone can share, is totally the way we should be eating. Not only does it usually end up being a more affordable dinner out, but you also get to try numerous items on the menu! And Butcher & Bee is one of those places where you definitely want to try everything on the menu. So if you’re in Nashville or Charleston, consider checking them out.

Anyways, we ordered the Whipped Feta with Fermented Honey & Cracked Black Pepper served with pita bread. It was…Absolute Heaven. So creamy and unlike anything else I’ve ever had. One of those things I knew I must recreate ASAP.

When I searched “whipped feta recipe”, I found many were blended with cream cheese. No thanks. Don’t get me wrong, cream cheese has magical powers when creating a creamy, rich consistency, but I wasn’t looking to add loads of extra calories and saturated fat to the feta cheese. That’s where non-fat plain Greek yogurt comes in to provide a creamy consistency without all the extra fat!

I probably could have whipped this even more, but I was impatient. I wanted to spread this all over the bread as fast as humanly possible. Bonus: This also makes a great veggie dip!

And because it’s now officially spring, I had to include my favorite spring vegetable. The mighty green spear, asparagus. Asparagus is a natural cancer-fighter as it contains antioxidants, including vitamin A and glutathione. And did you know that asparagus is great for eye health and reducing the risk of cataracts and macular degeneration thanks to the nutrients lutein and zeaxanthin? Each stalk of asparagus only contains about 2-4 calories, so snack away my friends.

For a quick lunch, just roast some asparagus spears, toast a couple of small pieces of bread, and top with lean roast beef. These open-faced roast beef toasts fit into the Mezze-style of eating so make several and invite some people over to enjoy them with! Brunch, anyone?

Roast Beef & Whipped Feta Toast

Ingredients

  • 1/2 cup feta cheese crumbles set at room temperature for 30 minutes
  • 3 tablespoons non-fat plain Greek yogurt
  • 1 medium garlic clove
  • 4 slices hearty whole grain bread
  • 4 ounces Top Round London Broil roast beef I used Boar's Head
  • 16 asparagus spears ends removed
  • 2 teaspoons olive oil divided
  • Salt + pepper to taste

Instructions

  • 1. To make whipped feta, combine the feta cheese, Greek yogurt, garlic, 1 teaspoon olive oil, and black pepper to taste in a food processor or blender. Combine until smooth. Refrigerate until ready to use.
  • 2. Roast asparagus in the oven by placing spears on a sheet pan and lightly drizzle with olive oil and season with salt and pepper. Toss to coat and spread asparagus into a single layer. Roast in a 350 degree oven for 10 minutes until tender but still crisp.
  • 3. Toast the bread, then spread a layer of the whipped feta on the toast before placing 4 asparagus spears and 1 ounce of roast beef on top of each piece. Serve immediately.
