Taco Pita Pizza

Change up taco night with this Taco Pita Pizza that’s ready in less than 30 minutes!

This month’s Recipe Redux theme is focused on the always delicious, ever-evolving taco. Today, the taco is breaking out of it’s (taco) shell and finding a new home on top of a pita. It’s a Taco Pita Pizza partaaaayy!

I kept this recipe pretty classic with traditional taco toppings like diced tomato, shredded cheese, red onion, cilantro, and my favorite topping of all, avocado! You could also add plain Greek yogurt or sour cream, jalapenos, black olives, and extra salsa for a more deluxe taco pizza.

I’m also thinking this would be a fun weekend brunch recipe—just top with an over-easy egg and call it breakfast!

Tacos are truly a great way to load up on good-for-you vegetables, so don’t be shy when piling on the lettuce, tomato, avocado, and red onion. I found pocket-less pitas which work perfectly as the base for this taco pizza. If you can’t find pocket-less pitas, regular pitas will work too.

Taco Pita Pizza

Ingredients

  • 4 pocket-less pitas
  • 1 pound 93% lean ground beef
  • 2/3 cup salsa
  • 1/2 cup low-fat shredded cheddar cheese
  • 1/4 cup finely diced red onion
  • 1 roma tomato diced
  • 1 avocado sliced
  • 1 cup shredded lettuce

Additional toppings:

  • Cilantro
  • Salsa
  • Sour cream or plain Greek yogurt

Instructions

  • 1. Preheat oven to 350 degrees F. Place pitas directly on to oven rack and heat for 5-7 minutes or until lightly browned. Remove from oven and keep warm by wrapping in aluminum foil.
  • 2. Meanwhile, cook ground beef in a large skillet over medium heat until cooked through and no longer pink. Drain any grease. Return skillet to heat and add in 2/3 cup salsa and cook for 2 minutes.
  • 3. Prepare the taco pita pizzas by placing a pita on a plate and topping with the cooked ground beef, shredded cheese, diced onion, diced tomato, avocado, and additional toppings as desired.
