Do you struggle with planning meals for one person? This is something I hear often, “I’m trying to cook more at home but it’s just so hard to prepare healthy meals for one person”. I can totally relate as I’m often cooking for myself only! To plan meals for the week without much waste, and without having to eat the same thing multiple days in a row, it’s essential to think outside the box a bit. This Cucumber Tartine is the perfect example!

I’ve enjoyed going to my neighborhood farmer’s market each week to pick up my weekly produce supply–peaches, berries, greens, squash, tomatoes, cucumbers, and much more! If the July heat has you beat, the last thing you want to do is stand over the stove or turn on the oven. This no-cook Cucumber Tartine is filling and flavorful, featuring fresh, thinly sliced summer cucumber.
Tartine is the fancy French word for an open-faced sandwich topped with a rich spread or cheese. Toasted bread + cheese spread + other delicious toppings = tartine. Bon appetit!
Cucumbers and feta go perfectly together, but to make for an easier spread, I added creamy ricotta to the feta cheese. Adding the ricotta cheese also makes the feta less overpowering, which is a good thing considering this tartine is topped with one of the most delicious flavors of all–truffle. What could be more French than a touch of truffle? All you need is a sprinkle of truffle salt to take this tartine to the next level. Serve with a side of fruit or this colorful, chickpea salad for additional protein and a more filling meal.
