Greek Chicken & Cauliflower Rice Bowl

This Mediterranean-inspired meal is in heavy rotation at my house this summer. Just look at all that color!

Zoe’s Kitchen has a Cauliflower Rice Bowl on their menu that you can get with a protein of your choice (I usually do salmon), so the other week when I was craving one, I decided it was time to make it at home. With just a few ingredients, this is a really simple recipe to make for dinner and works well as leftovers, too. Making this Greek Chicken & Cauliflower Rice Bowl at home is also much more budget-friendly than ordering it at a restaurant. Gotta love that!

Cauliflower Rice

If you haven’t tried cauliflower rice, I highly recommend it. Now, I’m not going to pretend like it has the same texture or flavor going on as rice because it doesn’t, but it is delicious in its own way. When rice is necessary, by golly, I’ll have some rice! The cauliflower rice works really in this recipe though because it’s light and provides a good base for everything else on top. You can make your own cauliflower rice by putting cauliflower florets into a food processor and processing until it resembles couscous (i.e. very fine). Then, warm a small amount of olive oil in a skillet, add the minced cauliflower bits, a touch of salt and cook for 5-8 minutes.

Or you can take a shortcut and buy frozen cauliflower rice like I usually do 🙂 The frozen cauliflower rice packages usually give two preparation methods: microwave or stove-top. I suggest busting out a skillet to heat up the cauliflower rice so that some of the water in the product can cook off. I also season it with a pinch of salt and black pepper once it’s been heated through.

This may be one of my favorite bottled dressings. I’ve mentioned before that I don’t typically buy pre-made dressings, but this is an exception. It also makes for a great dip on a veggie tray! Definitely beats the flavor of ranch dressing and it’s made with Greek yogurt, so it’s a lower calorie option than most dairy-based dressings.

You really don’t need much dressing on this bowl because the chicken is so flavorful, plus you’ll have all the fresh veggies and feta cheese. Some other topping suggestions include red onion, avocado, kalamata olives, tomatoes, or fresh dill. This could easily be turned into a delicious leafy green salad if you feel like swapping out the cauliflower rice.

It’s a real challenge to stop and take photos of a meal before sitting down to enjoy it, and I got such in a rush to eat this that I forgot to add the sliced green onion before taking photos. But they made it on before sitting down to eat!

Greek Chicken & Cauliflower Rice Bowl

Ingredients

  • 2-5 ounce boneless skinless chicken breasts
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1-12 ounce bag frozen cauliflower rice
  • Diced red & yellow bell pepper
  • Sliced cucumbers
  • Sliced green onion
  • Shredded carrots
  • Feta cheese
  • Feta Dill Greek yogurt dressing

Instructions

  • 1. Season both sides of each chicken breast with oregano, thyme, garlic powder, and black pepper. Lightly coat a grill pan or a skillet with cooking spray and heat over medium heat. Add the chicken once pan is hot. Cook for 8-10 minutes or until the internal temperature reaches 165 degrees F.
  • 2. While chicken is cooking, prepare the cauliflower rice per package directions.
  • 3. Divide the cauliflower rice among two bowls and top with sliced chicken, vegetables, feta cheese, and dressing as desired.

Notes

If making homemade cauliflower rice, prepare this before you start cooking the chicken.
