Lemon White Chocolate Popcorn

This sweet & salty Lemon White Chocolate Popcorn will delight your taste buds with a burst of fresh lemon!

I’m popping in (pun intended) to share a popcorn recipe that has become a new favorite for movie night….or any night really! The best part is you only need four ingredients needed to make this craveable Lemon White Chocolate Popcorn at home.

The Sprouts brand salted microwave popcorn works really well for this recipe because the slight saltiness is the perfect match to the sweetness of the white chocolate. That’s my favorite flavor combination….sweet & salty! You could also buy popcorn from the bulk department at Sprouts and salt it to your liking before adding the other ingredients. Buying from the bulk department is a great way to save a little $$ too, and I often shop Sprouts bulk section for nuts, grains, and dried fruits. When it comes to popcorn though, I keep popcorn kernels from the bulk section and microwave popcorn bags on hand so no matter my mood, I can have popcorn when the craving strikes!

The smell of freshly zested citrus is always so invigorating, and you don’t need much of the lemon zest to make this popcorn flavorful. A tablespoon is all you’ll need for this recipe, but you could certainly add more if you’d like. One of the reasons I shop at Sprouts Farmers Market regularly is because of their amazing prices on produce, like lemons at 3 for $1!

Kitchen Tip: Wash citrus and pat dry with a paper towel before zesting.

Once the lemon zest is added to the popcorn with the white chocolate, it’s best to let it “dry” on a baking sheet for about 2 hours before storing. It was quite a challenge to not eat all of the popcorn while taking photos of it!

Melting White Chocolate 

Melting white chocolate can be temperamental sometimes, so be careful to not heat it too long in the microwave. Usually, 30 seconds on medium or medium-high heat is long enough at any one time. You can always pop it back into the microwave for a little bit longer if needed. When it’s time to mix the white chocolate into the popcorn, I lightly spray my mixing spoon with cooking spray to prevent the popcorn from sticking to it. Makes the job much easier 🙂

Lemon White Chocolate Popcorn

Ingredients

  • 1 bag Sprouts brand salted microwave popcorn
  • 3/4 cup white chocolate chips
  • 1/4 teaspoon canola oil
  • 1 tablespoon grated lemon zest

Instructions

  • 1. Pop microwave popcorn according to package directions. Place popcorn into a large mixing bowl, removing any unpopped kernels.
  • 2. Place white chocolate chips into a microwave-safe bowl and heat for 25-30 seconds intervals, stirring in between. Be careful to not overheat the chocolate. Stir in canola oil, mixing well.
  • 3. Pour one-third of the melted chocolate over the popcorn and mix. Repeat this two more times until all chocolate is used.
  • 4. Once the popcorn is coated, pour onto a large baking sheet. Sprinkle lemon zest over popcorn, evenly distributing.
  • 5. Spread the popcorn out into a single, even layer and allow to dry for about 2 hours.

Notes

Spray mixing spoon with cooking spray before mixing white chocolate into popcorn to prevent sticking.
