Happy Friday, friends! It’s been mighty cold here in Nashville, but that didn’t stop me from making a smoothie bowl this week! For the Recipe Redux challenge this month, we were asked to use a new ingredient for the new year. Have you tried any new ingredients at home this year?

While my love for matcha has been strong for years, I’ve never tried anything beyond purchasing matcha tea and lattes, the main reason being I could never bring myself to buy a can of matcha powder. It’s not cheap. But in all reality, neither is buying matcha lattes from Starbucks or the one tea shop in Nashville that serves it.

So, with my practical decision-making hat on, I finally purchased a 1.5-ounce container of stone-ground green tea powder. At first, I thought I would use the beautifully green earthy powder to bake cookies, but alas I went in the complete opposite direction and made a smoothie bowl. Boy, am I glad I did! This smoothie bowl has a heaping tablespoon of ginger so it has quite the kick and the pomegranate seeds were the perfect compliment to the matcha flavor. And how gorgeous is the color? Other smoothie bowls will be green with envy.

So what is matcha and why should you consider adding it to your diet? Matcha is a young, green tea that is very high in antioxidants and chlorophyll, which is to thank for the gorgeous green color. Matcha is different from other teas in that you actually consume the entire matcha tea leaf. Since the tea leaves are stone ground and all of that goodness ends up in your cup, you reap more of the nutritional benefits of the plant. It’s also the reason it costs more than traditional teas. Can you imagine grinding up a bunch of delicate tea leaves? Sounds like quite a job!

Matcha Power Smoothie Bowl

Ingredients

  • 4 fluid ounces coconut milk or milk of choice
  • 1 1/2 cups fresh spinach leaves
  • 3 1- inch frozen banana chunks
  • 1/4 of avocado sliced
  • 1 tablespoon fresh minced ginger root
  • 1 1/2 teaspoons matcha green tea powder
  • 1 teaspoon fresh lemon juice
  • 1 date chopped
  • Toppings:
  • Pomegranate seeds
  • Banana slices
  • Chia seeds

Instructions

  • Combine all ingredients in a blender, starting with the liquid. Process until smooth. Pour into a bowl and top with pomegranate seeds, banana slices, and chia seeds or other desired toppings.
