Mocha Raspberry Overnight Oats

Oatmeal is getting the love treatment this week with a dose of cocoa powder, fresh raspberries, and a shot of brewed coffee.

The best part of waking up is….coffee in your oats. Okay, so that doesn’t sound as good as the original jingle, but this definitely tastes delicious and that is what’s important!

As I mentioned in my post earlier this week, chocolate + berries are a perfect duo.

These gorgeous little red gems are an excellent source of vitamin C and fiber, are rich in antioxidants and have been shown to play a role in heart health. Oats are also great for heart health because they have a specific type of fiber known as beta-glucan, which helps lower cholesterol levels and reduce the risk of stroke. I love eating oatmeal for breakfast because I know it’ll keep me feeling full and satisfied until lunch!

Mocha Raspberry Overnight Oats

Ingredients

  • 3/4 cup old-fashioned oats
  • 1/4 cup raspberries mashed slightly
  • 1 1/2 teaspoons honey
  • 1 teaspoon cocoa powder
  • 1 teaspoon chia seeds
  • 1/2 teaspoon cinnamon
  • 1/2 cup brewed coffee
  • 1/2 cup milk or non-dairy milk

Instructions

  • 1. In a bowl or 1-pint mason jar, add all of the ingredients, being sure to add the liquids last.
  • 2. Place lid on the mason jar and shake to mix ingredients or stir mixture with a spoon if using a bowl and cover with plastic wrap.
  • 3. Allow oats to sit for at least 8 hours before digging in! Enjoy either warm or cold.

Oatmeal is always a quick breakfast option, but when you make your oats in a jar, you can easily grab it in the morning as you head out the door! Now that’s healthy fast food!
