Red Beans & Greens Crock-Pot Soup

When I was asked to do several culinary demonstrations for Glory Foods at the Southern Women’s Show here in Nashville, I jumped at the opportunity. I love their products, especially the Sensibly Seasoned items because even though they are low in sodium, fat, and cholesterol, they all have great flavor! And I’m all about convenient cooking. So if I can make a delicious, healthy meal using canned products, you better believe that’s what I’ll do! This soup features the Sensibly Seasoned Red Beans and Mixed Greens. The other great ingredient in this soup is farro. If you haven’t tried farro yet (pronounced far-oh), it’s a great grain for soups, as a salad topper, or as a side dish. With a slightly chewy texture and nutty flavor, farro is high in fiber and has 7g of protein per 1/4 cup serving.

I’m pretty sure the worst cook in America could prepare this soup without difficulty.
