It really doesn’t get much easier than this Sauteed Cabbage & Kale with Bacon when it comes to veggie side dishes. Can you really ever go wrong when bacon is involved?
Cabbage gets a fair amount of attention this time of year compared to other times, but I’m proposing that we start showing this cruciferous veggie a little more love year-round. I’m totally guilty of passing it by in the grocery store on most occasions, but I’m going to make a conscious effort to start including it into my diet more often.

Why should we try to include more cabbage in our diet? There are many reasons! First of all, it’s a vegetable, and we could all probably stand to have a little more veg in our lives. Agreed? Second, cabbage is a cruciferous vegetable (as is kale), which means it contains sulfur-containing chemicals called glucosinolates. These compounds are the reason why cabbage is so pungent when being cooked and has also been linked to reducing carcinogens in the body. Cabbage is also high in vitamin C, so it’s great for our immune system and our skin!

To keep sodium low, I used low-sodium bacon and didn’t season the vegetables with any salt since they were cooked in vegetable stock (which adds salt). Want to make this a vegetarian side dish? You can leave the bacon out and the kale and cabbage will still have plenty of flavor from the vegetable stock.

Sauteed Cabbage & Kale with Bacon
Ingredients
- 4 slices low-sodium bacon
- 1/4 cup diced yellow onion
- 5 cups chopped green cabbage
- 4 ounces vegetable stock
- 3 cups chopped kale
Instructions
- 1. Cook bacon in a large skillet over medium heat until crisp. Remove from skillet and place on a paper towel lined plate to remove grease. Drain bacon grease from skillet, leaving about 1 tablespoon in the pan.
- 2. Saute onions over medium heat in bacon grease for 3 minutes. Add cabbage and 2 ounces of the vegetable stock to the skillet, cover, and cook for 5 minutes.
- 3. Stir the cabbage and add kale and remaining vegetable stock. Cover with lid and cook for 5-7 minutes.
