4sliceslow-sodium bacon
1/4cupdiced yellow onion
5cupschopped green cabbage
4ouncesvegetable stock
3cupschopped kale

Instructions
1. Cook bacon in a large skillet over medium heat until crisp. Remove from skillet and place on a paper towel lined plate to remove grease. Drain bacon grease from skillet, leaving about 1 tablespoon in the pan.
2. Saute onions over medium heat in bacon grease for 3 minutes. Add cabbage and 2 ounces of the vegetable stock to the skillet, cover, and cook for 5 minutes.
3. Stir the cabbage and add kale and remaining vegetable stock. Cover with lid and cook for 5-7 minutes.
