Ingredients
2-5ouncebonelessskinless chicken breasts
1/2teaspoondried oregano
1/2teaspoondried thyme
1/2teaspoongarlic powder
1/4teaspoonblack pepper
1-12ouncebag frozen cauliflower rice
Diced red & yellow bell pepper
Sliced cucumbers
Sliced green onion
Shredded carrots
Feta cheese
Feta Dill Greek yogurt dressing
Instructions
1. Season both sides of each chicken breast with oregano, thyme, garlic powder, and black pepper. Lightly coat a grill pan or a skillet with cooking spray and heat over medium heat. Add the chicken once pan is hot. Cook for 8-10 minutes or until the internal temperature reaches 165 degrees F.
2. While chicken is cooking, prepare the cauliflower rice per package directions.
3. Divide the cauliflower rice among two bowls and top with sliced chicken, vegetables, feta cheese, and dressing as desired.
Notes
If making homemade cauliflower rice, prepare this before you start cooking the chicken.
