Ingredients
14Breton Artisanal Sweet Potato and Ancient Grains Crackers
15ouncespart-skim ricotta cheese
1medium mangodiced (about 1 cup)
1/4teaspooncinnamon
2basil leaves + 4 basil leaves for garnish
3strawberriescut in half with stem and hull removed

Instructions
1. Place crackers in a food processor and pulse to make crumbs. Remove cracker crumbs from food processor and place in a bowl. Clean food processor bowl.
2. Combine the ricotta cheese, diced mango, cinnamon, and 2 basil leaves in the food processor bowl and process until smooth. Pour the mixture into a bowl.
3. Add a heaping teaspoon of the cracker crumb to the bottom of each mason jar. Top with a layer of ricotta mixture, then add another teaspoon of cracker crumb, followed by another layer of blended ricotta. Top each parfait with a strawberry half, cracker crumb, and finely chopped basil. Serve immediately or refrigerate and serve within 4 hours for best flavor.
Notes
The ricotta mixture and cracker crumbs can be made a day ahead to save time.
