drained and rinsed

can diced tomatoes with chiles
drained

frozen corn kernels

red bell pepper
diced

white onion
finely diced

chipotles in adobo sauce
diced

jalapeno
finely diced (remove seeds if you prefer less spicy)

garlic cloves

Cabot Creamery Pepper Jack cheese
grated

Cabot Creamery White Oak Cheddar cheese

Instructions
1. Preheat oven to 350°F.
2. Combine all ingredients, except cheese, in a large bowl and mix. Add half of each grated cheese to the mixture and stir.
3. Pour mixture into a 11x7 baking dish. Top with remaining cheese. Bake for 20 minutes until cheese is melted.
4. Serve with tortilla chips or use as a taco filling!
