Instructions
1. Preheat oven to 400 degrees F. In a mixing bowl, combine the cranberries, maple syrup, water, orange zest, and rosemary. Pour the cranberries into a 9x13 baking dish and roast in oven for 15 minutes. Remove from oven and set aside.
2. Meanwhile, prepare the puff pastry by carefully unfolding it and placing it on a lightly floured work surface. If needed, use a rolling pin lightly covered in flour to roll the dough to a 1/8-inch thickness. Using a pizza cutter or a sharp knife, cut the pastry into 8 rectangles, then cut each rectangle in half to make 16 squares. Gently stretch each square to approximately 3 1/2-inches.
3. Place each pastry square onto a parchment-lined baking sheet. Use a fork to prick the dough every 1/2-inch.
4. Place two pieces of Brie in the center of the dough. Top with 1 tablespoon roasted cranberries, leaving a pastry border. Wet the edges with a small amount of water using your finger and bring the edges up around the cranberry filling.
5. Bake pastries at 400F for 23-25 minutes, or until pastry is puffed and golden brown. Remove from oven and lightly drizzle honey over each pastry.
6. Place pastries on a cooling rack for 15 minutes before serving.
