Ingredients
1cup100% pumpkin pureenot pumpkin pie filling
1/2cuppeanut butteror nut butter of choice
3/4cupquick oats
3pitted dates
1tablespoonpure maple syrup
1teaspoonground dark roast coffee
1/2teaspoonchia seeds
1/4teaspooncinnamon
pinchof salt
1cupwhole pecans

Instructions
1. Combine all of the ingredients, except pecans, into a food processor or Vitamix blender and process until smooth.
2. Refrigerate mixture for 15 minutes. Line a baking sheet with parchment paper.
3. To roll mixture into balls, first lightly coat hands with cooking spray. Form 1-inch balls using a tablespoon measure to scoop mixture into hands. Place onto the lined baking sheet. Place baking sheet in the refrigerator for 15 minutes.
4. In the meantime, process the pecans in the food processor or Vitamix until finely chopped. Pour into a bowl.
5. Remove the baking sheet from the refrigerator and roll one ball at a time into the chopped pecans until covered.
6. Keep stored in an air-tight container in the refrigerator for up to 3 days.
