Ingredients
1/2cupfeta cheese crumblesset at room temperature for 30 minutes
3tablespoonsnon-fat plain Greek yogurt
1medium garlic clove
4sliceshearty whole grain bread
4ouncesTop Round London Broil roast beefI used Boar's Head
16asparagus spearsends removed
2teaspoonsolive oildivided
Salt + pepper to taste

Instructions
1. To make whipped feta, combine the feta cheese, Greek yogurt, garlic, 1 teaspoon olive oil, and black pepper to taste in a food processor or blender. Combine until smooth. Refrigerate until ready to use.
2. Roast asparagus in the oven by placing spears on a sheet pan and lightly drizzle with olive oil and season with salt and pepper. Toss to coat and spread asparagus into a single layer. Roast in a 350 degree oven for 10 minutes until tender but still crisp.
3. Toast the bread, then spread a layer of the whipped feta on the toast before placing 4 asparagus spears and 1 ounce of roast beef on top of each piece. Serve immediately.
