2 1/2cupsabout 1 ounce spring mix
1/4cupred bell pepperdiced
1/4cupfresh pineapplediced
1/4cupmangodiced
1/4cupavocadodiced

1poundtop sirloin steakcut into 1 inch pieces
1/3cupketchup
2tablespoonshoisin sauce

Instructions
To prepare Hoisin Steak:
1. Combine ketchup and hoisin sauce in a large bowl. Add beef pieces and toss to coat. Cover bowl and place in refrigerator. Marinate for 2-4 hours.
2. Heat a cast iron grill pan over medium-high heat. Thread beef pieces onto metal skewers, leaving about a half-inch between each piece. Place onto hot grill pan and allow to cook for 5-7 minutes or until internal temperature reaches 160 degrees F. Remove skewers from grill pan and allow to rest for 5 minutes before serving.
3. Keep cooked beef in an air-tight container for up to 3 days and reheat before use.
To prepare salad:
In a bowl or wide-mouth mason jar, layer the spring mix, red bell pepper, pineapple, mango, and avocado. Add 3 ounces of cooked beef and enjoy!
