Cauliflower Queso Dip {Vegan}

Can you really have a football celebration without cheese dip though? I may not know a lot about football, but I do know it’s in the rules of football-watching that one must have queso, salsa, and tortilla chips. Which is why I made this Cauliflower Queso Dip for a fun twist on a game day classic!

Sometimes, the game day spread can leave us feeling a little heavy though. It’s hard to jump up on the couch and cheer for your team when weighed down by pounds of chicken wings, cheese dip, and potato chips. That’s why I’ve created this lighter, veggie-ful Cauliflower Queso Dip! You can feel good about scooping into this creamy dip throughout the big game. It has the spiciness, creaminess, and cheesy goodness of queso but with waaaaaaayyyy less saturated fat. SCORE!

Servings: 4 cups (16 servings)Ingredients
- 1 large head cauliflower about 4 cups of florets
- 3 Tbsp. Sprouts Brand olive oil
- ½ tsp. ground cumin
- ½ tsp. turmeric
- ¼ tsp. cayenne pepper
- ¼ tsp. ground chipotle pepper
- pinch of salt
- 1 ½ cups Sprouts Brand silken tofu
- 4 fl. oz. unsweetened cashew milk or soy milk
- 4 oz. can diced chiles liquid drained
- ½ cup nutritional yeast
- ¼ cup Sprouts Brand Fire Roasted salsa
- 1 chipotle pepper canned in adobo sauce
- salt to taste
- 1 cup dairy-free shredded Pepper Jack cheese
- Sprouts Brand white corn tortilla chips
- Cilantro
- 1 can nacho-sliced jalapenos
Instructions
- 1. Preheat oven to 400°F.
- 2. Add cauliflower florets to a large mixing bowl and toss with olive oil, cumin, turmeric, cayenne pepper, chipotle pepper and salt. Place the florets in a single layer on a baking sheet. Roast in oven for 22-24 minutes. Remove from oven and allow to cool for 5 minutes.
- 3. Add the cauliflower, silken tofu, milk, diced chiles, nutritional yeast, salsa, chipotle pepper, and salt, to taste, in a food processor bowl or high-speed blender. Process on high until smooth.
- 4. Pour the cauliflower mixture into a saucepan and add the shredded cheese. Heat over medium-low, stirring occasionally, until cheese is melted and the queso is heated through.
- 5. Serve the dip warm and top with fresh cilantro and the nacho-sliced jalapenos, if desired. Serve with tortilla chips.
