Mediterranean Cod with Rotini + Ragu Homestyle Pasta Sauce {Giveaway!}
Enjoy a hearty, family-friendly dish simmered in tradition with the new Ragu Homestyle Pasta Sauce.
Hello, Nutrition Adventurers! I hope youβve had a great week. The weekend is almost here, and Iβm heading home to Indiana to visit family, which Iβm super excited about. This post couldnβt have been timed more perfectly because todayβs recipe is all about home-style cooking and family tradition.
While making pasta sauce from scratch sounds like a nice idea, it isnβt always practical. Life just gets a little cray sometimes. Thatβs why Iβm all about making life simpler wherever possible and the new Ragu Homestyle Pasta Sauces are a real life/time-saver! Most importantly, the home-style flavor isnβt lost, so you can feel good about using it in your familyβs favorite pasta recipes like lasagna or spaghetti & meatballs. And hopefully, this recipe will soon become a family favorite!
When it comes to tomato-based pasta sauce, donβt give me the weak, soupy sauces that run all over the place. A good red sauce should be thick enough to hug every last noodle, like this sauce does. The Ragu Homestyle sauces are their boldest flavors yet. The ingredients simmer together with a special blend of herbs (basil, fennel, oregano, and black pepper) to layer and build flavor, just like Mom would do. There are no artificial flavors, artificial colors, or high fructose corn syrup here folks! Just the good stuff.

With pasta dishes, the more veggies you can add the better! There are two servings of vegetables in this recipe with the combination of the Ragu Homestyle sauce and the addition of zucchini, onions, and spinach. Pair this pasta dish with a simple side salad and youβll be on your way to 3 servings of vegetables at one meal. High five to that!
One serving of Ragu Homestyle Thick & Hearty Roasted Garlic is just 90 calories per serving, contains 3 grams of fiber, and provides 10% of the daily value of Vitamin A. Add an extra boost of fiber by using whole-wheat rotini. On a gluten-free diet? Simply swap out with your favorite gluten-free pasta.
Once youβve sauteed the zucchini and onions in a dutch oven, itβs time to add in the Ragu pasta sauce!
Allow the sauce to simmer for a couple of minutes before carefully placing the seasoned cod fillets in the pan. The fillets will gently simmer in the hearty tomato sauce for 6-8 minutes, soaking up the delicious flavor.
Dish out the rotini between four bowls and top each with a cod fillet before pouring the sauce & vegetables over top. If youβre feeling a little fancy, garnish with fresh parsley or basil. Voila! Dinner is served, my friends.
Bon AppΓ©tit!
Ingredients
- 1/2 pound dry whole wheat rotini pasta or substitute gluten-free pasta
- 4-4 ounce cod filets
- 2 teaspoons olive oil
- 1 cup zucchini quartered and sliced 1/8-inch
- 1/2 cup white onion finely chopped
- 3 cups baby spinach leaves
- 6 Kalamata olives pitted and chopped
- 1-23 ounce jar Ragu Homestyle Thick & Hearty Roasted Garlic Sauce
- parsley to garnish
Instructions
- 1. In a medium saucepan, cook pasta according to package directions. Drain, rinse, and set aside.
- 2. Place cod filets on a plate and pat dry with a paper towel. Season with salt and black pepper to taste.
- 3. Heat 2 teaspoons of olive oil over medium heat in a dutch oven or large, heavy-bottom sauce pan. Once oil is hot, add onions and zucchini and cook for 4 minutes. Add spinach, olives, and Ragu Homestyle Thick & Hearty Roasted Garlic Sauce. Cook for 2 minutes.
- 4. Carefully place cod filets into the sauce and lightly cover them with the sauce. Cook for 6-8 minutes on medium-low heat until fish easily flakes and is opaque.
- 5. Divide the cooked pasta into four serving dishes and top each with a cod filet. Divide the pasta sauce and vegetables between each dish. Garnish with parsley and serve immediately.
