Brussels, Bacon, & Fig Pizza
This Brussels, Bacon, & Fig Pizza makes a great party appetizer or pair with a side salad for a fancy dinner made easy!
Hi friends! It’s an exciting week in the world of nutrition because this coming weekend kicks off the Food & Nutrition Conference and Expo (FNCE) in Boston. I love FNCE for so many reasons but primarily because it’s the one time of year I get to see so many of my Registered Dietitian pals in one place! I always leave FNCE feeling invigorated from learning and from hearing about the amazing work dietitians are doing to help support a healthier future. In my last recipe post, I shared how I was falling for figs with my Pumpkin Fig Smoothie Bowl. Well, the figs found their way on to this pizza and it was ahhh-mazing. I understand that figs may not be the most traditional pizza topping, but I’m not really one for tradition. Plus, Brussels sprouts, bacon and figs are a beautiful trio.
Are you a Brussels sprouts fan? Everyone knows a Brussels sprouts hater. Someone who has terrible memories of eating mushy, stinky Brussels sprouts. I feel sorry for people who haven’t tried Brussels sprouts prepared correctly because they are seriously missing out. But for those with Brussels-phobia, this pizza could possibly help them overcome the notion that all Brussels sprouts taste awful.
How so? Well, first of all, BACON. Yeah, the Brussels sprouts are paired with bacon and 99% of people love bacon. Second, the sprouts are sliced thin and sauteed until slightly caramelized. The caramelization of vegetables brings out the natural sugars and develops a deeper, complex flavor (think caramelized onions).

I love using naan bread as a pizza crust because there’s no prep required, it’s the perfect thickness, and it takes less time to bake. I used fresh naan bread in this recipe, which you can find at most grocery stores in the bread/bakery section.

Ingredients
2 pieces of naan bread
1 teaspoon olive oil
2 tablespoons pesto
4 slices bacon
2 cups thinly sliced Brussels sprouts
1/4 cup thinly sliced red onion
2 ounces fresh mozzarella
4 figs, sliced
This recipe is so simple together, but it looks and sounds fancy, so you can totally impress people by serving this as a party appetizer. But hurry, fig season won’t last much longer!

Thanks to you…I bought frozen sliced figs last night at Trader Joes. I also made bacon last night too! And, I have a ready made pizza crust in the pantry. I will let you know about this recipe after I make it tomorrow.

Also, SO excited for FNCE. I have a big heart for conferences and expos. Second to my past customers, its one thing I miss the most about not having my store. The comradeship of gathering with like minds in one big event.
