With summer officially in full swing, bees are hard at work to produce one of the greatest natural sweeteners we have–honey. Honey is the perfect sweetener for this recipe because a little bit goes a long way, and it doesn’t overpower the natural sweetness of the fruit. And it goes so well with ricotta cheese. This much-loved recipe was first shared here on the blog seven years ago as part of the monthly Recipe Redux challenge. It’s been quite some time since I’ve participated in the monthly Recipe Redux challenge but as it comes to an end this month after eight delicious years, all of the members were asked to share their favorite post from the past to mark the end of an era. I feel so grateful to have been included early on in the Recipe Redux group because I met so many incredible bloggers that are still creating great content today, and who have inspired me and shared so much blogging wisdom over the years!
Making Honey-Sweetened Fruit & Ricotta Toast
Peaches are at their peak right now and this is truly one of my favorite ways to enjoy them. This recipe was inspired by a local Nashville restaurant, Marché, where they serve it for brunch. The restaurant makes its own bread, and I fully believe that having the right bread for this recipe is important. Hearty whole-grain bread with a good crust, sliced about a half-inch thick is what I use. The bread has to be able to support all those sliced peaches & a creamy layer of ricotta!
Strawberries also work really well on Ricotta Toast and drizzled with honey (#yum).
I usually go for the part-skim ricotta cheese, but you could also use the whole fat or fat-free ricotta cheese—whichever suits you best!
Ingredients
- 1 slice of whole grain bread
- 1 peach sliced 1/4" thick
- 3 tablespoons part-skim ricotta cheese
- Cinnamon
- Honey
Instructions
- 1. Toast bread until golden brown.
- 2. Spread ricotta cheese on toasted bread and sprinkle cinnamon on top of ricotta cheese.
- 3. Place sliced peaches on top of ricotta cheese, then drizzle honey over fruit. Sprinkle more cinnamon if desired.

I never think about using ricotta as a spread for toast, but this sounds really good!

In the past, I’d make a dip out of ricotta with a little sugar for dipping fruit but love your version with honey (and using as a spread for good crusty bread.) Will be making this once strawberries hit our farmers market, for sure!
