Today, we celebrate. We celebrate because today is Regan Jones’s birthday.
Almost four years ago, I joined in on the monthly recipe challenge Recipe Redux, which Regan is one of the co-founders. Not long after joining and participating, I met Regan at Food Blog South in Birmingham and was immediately inspired by her enthusiasm and charmed by her Southern spirit. To this day, she is still an inspiration and continues to elevate the healthy food blogger community through the Recipe Redux and Healthy Aperture.
Regan was also one of the masterminds behind Blog Brûlée in Vermont, which was the BEST food blogger conference EVER. That Vermont trip was the inspiration behind this citrus cocktail creation. One of the goodies we received in our swag bags was Grapefruit-Lemon Marmalade from Blake Hill Preserves of Vermont and it’s the perfect addition to this mojito-like beverage.

Ingredients
1 tablespoon grapefruit-lemon marmalade
6 oz fresh orange juice
2 oz Gin
1/2 oz fresh lemon juice
8 mint leaves, roughly broken apart
Ice
Orange slice, for garnish
