Oven-Dried Pineapple

You don’t have to say goodbye to your favorite summer fruits and veggies just yet. Savor the flavors of seasonal fruits and veggies by dehydrating them, and enjoy for months to come. This month’s Recipe Redux theme is “Getting Your Dehydrator On.” If you’re like me and don’t own a dehydrator, no worries! With a low oven temperature, you can dehydrate all kinds of foods with the appliance many of us already have in the kitchen. Today I’m sharing my method for creating Oven-Dried Pineapple!
How to Dehydrate Pineapple in the Oven
To get started, remove the top and bottom from the pineapple so it can stand up straight. Next, slice off the pineapple skin in thin slices, cutting deep enough to remove the eyes.
The key to making oven-dried pineapple is to slice the pineapple into very thin slices, about 1/8-inch thick. If the pineapple slices are too thick, they’ll take way too long to dry out in the oven! I removed the core from each of the pineapple slices but if you prefer to leave it in, that’s okay. To remove the core, use a paring knife to cut around it. Once the slices are prepped, lay them on paper towels to soak up some of the juices before placing into the oven.
Using a cooling rack placed on a baking sheet while in the oven will help dehydrate the pineapple slices quicker because it allows for more airflow. We’re dehydrating these low and slow, setting the oven to 185°F.
Inspired by one of my favorite dried fruit snacks from Trader Joe’s, the Chile-Spiced Mango, I decided to blend chili powder and cinnamon to compliment the sweetness of the pineapple. If you’re looking for something really different to try with dried pineapple, sprinkle on some curry powder before putting them into the oven!
Equipment you’ll need:

- 1 medium pineapple
- Chili-Cinnamon Dried Pineapple
- 1/4 tsp chili powder
- 1/4 tsp cinnamon
- Curry Dried Pineapple
- 1/2 tsp curry powder
Instructions
- 1. Preheat oven to 175°F.
- 2. Remove the base and the leaves from pineapple. Then stand the pineapple on one end and cut off strips of skin from top to bottom. Lay the pineapple on its side and cut into 1/8 inch slices. Remove core from each individual slice by carefully cutting around it with a paring knife.
