Cheesy Black-Eyed Pea Dip

Not all party foods have to be greasy, loaded with fat, and void of fresh fruits or veggies. We can do much better than that, folks. Be the person who brings a dish to the party that tastes delicious and is also nutritious! Like this veggie-full, cheesy black-eyed pea dip.

Black-eyed peas haven’t been getting enough attention in my life lately. Well, that changes today because they are awesome. A half-cup of black-eyed peas provides 20% of the daily recommended amount of fiber and they are naturally low in fat and cholesterol-free.

Cabot’s Pepper Jack cheese was a no-brainer for this recipe to help kick things up a notch. For a creamy, sharp cheddar taste, I added Cabot’s White Oak Cheddar from the Farmer’s Legacy Collection. Have you seen the Legacy Collection in your grocery store? They’re like bars of cheese gold. Not only do they look pretty, but they’re also perfect for cheese boards and pairing with wine.

This dip is sooo easy to make. First, grate your Cabot cheese (this is the fun part!).

Combine all the ingredients in a bowl and mix it up. It’s best to have music playing while doing this.

Pour mixture into a baking dish and top with MORE cheese. Ohhh yeahhhh…..

Bake until the cheese is nice and melty, then dive in with your tortilla chips!

Cheesy Black-Eyed Pea Dip

Ingredients

  • 2-15.5 oz cans black-eyed peas drained and rinsed
  • 1-10 oz can diced tomatoes with chiles drained
  • 3/4 cup frozen corn kernels
  • 3/4 cup red bell pepper diced
  • 1/2 cup white onion finely diced
  • 2 chipotles in adobo sauce diced
  • 1 jalapeno finely diced (remove seeds if you prefer less spicy)
  • 2 garlic cloves
  • 3 oz Cabot Creamery Pepper Jack cheese grated
  • 3 oz Cabot Creamery White Oak Cheddar cheese grated

Instructions

  • 1. Preheat oven to 350°F.
  • 2. Combine all ingredients, except cheese, in a large bowl and mix. Add half of each grated cheese to the mixture and stir.
  • 3. Pour mixture into a 11x7 baking dish. Top with remaining cheese. Bake for 20 minutes until cheese is melted.
  • 4. Serve with tortilla chips or use as a taco filling!
