Kiwi Green Smoothie

This time of year, McDonald’s’ Shamrock Shake seems to be a hot item, and you can find about a bazillion copycat recipes on the web. I’ve never tried one and really don’t intend to as it just doesn’t sound appealing—mint flavoring? No, thanks. Fresh mint leaves? Yes, please!
Instead, I’ll toast to St. Patrick’s Day with this Kiwi Green Smoothie. No need for food coloring here! Kiwi, avocado, and mint leaves bring the green and plenty of nutritional benefits.
Kiwi {potassium, vitamin C, fiber, fat free}
Avocado {healthy fats, potassium, fiber, folate}
Mint {manganese, vitamin A, vitamin C, digestive remedy}

Ingredients
- 1/2 cup apple cider or pressed apple juice
- 2 kiwis cut into quarters and skin removed
- 1/2 avocado
- 3 1- inch frozen banana chunks
- 6 mint leaves torn
Instructions
- 1. Place all ingredients in a blender and process until smooth. Garnish with a kiwi slice and mint leaf.
