Dark Chocolate Pistachio Cranberry Bark

Hi everyone! I’m popping in with a super easy, last-minute holiday treat you can share with family and friends or give as a gift. This Dark Chocolate Pistachio Cranberry Bark is a recipe I made a couple of years ago when I needed a dessert to take to a Christmas party. I already had the ingredients in my pantry, so it was very convenient!
I always love it when simple recipes like this turn out so well and even though it looks kind of fancy, anyone can make this recipe. Seriously. If you can melt chocolate and then wait patiently while the chocolate cools in the refrigerator, then you’re golden. Waiting is by far the hardest part of this recipe.
I used two different types of dark chocolate in this recipe, but you can feel free to use whatever type of dark chocolate you prefer. Remember, the higher the percentage of cocoa, the more bitter the chocolate will be.
Cranberries, pistachios, coffee, and salt all work so well with dark chocolate. Even people who don’t like drinking coffee (I think I just heard a few people gasp at that statement) like this recipe. This Dark Chocolate Pistachio Cranberry Bark is something that is requested by my coworkers now and it’s my go-to when I need a quick treat to share during the holidays 🙂
When drizzling the second batch of chocolate over top, I use a spoon rather than making a piping bag from a plastic bag because I like the varied globs of chocolate that occur. Plus, the globs of chocolate scattered around the bark allow for the coffee and sea salt to stick easier rather than having a thin drizzle on top. Chocolate glob goodness!

Ingredients
- 1 cup + 1/4 cup 53% dark chocolate chips or morsels divided
- 1 cup + 1/4 cup 62% dark chocolate chips or morsels divided
- 1/4 cup pistachio nuts
- 1/4 cup dried cranberries
- 1/2 teaspoon sea salt
- 1/2 teaspoon finely ground medium or dark roast coffee
Instructions
- 1. Line a baking sheet with parchment paper. Set aside. Roughly chop the pistachios and cranberries and set aside.
- 2. Add the two dark chocolates, 1 cup of each, to a heatproof bowl set over a pan of simmering water. Use a rubber spatula to stir the chocolate until it is completely melted.
- 3. Once chocolate is melted, pour onto the parchment paper shaping into a circle or rectangle with a rubber spatula until the chocolate is only 1/4-inch thick. Sprinkle the pistachios and dried cranberries over the chocolate. Set the pan in the refrigerator for 15 minutes to chill.
- 4. While the chocolate is cooling, wash the heatproof bowl used to melt the first batch of chocolate and return to the pan to melt the remaining chocolate.
- 5. Remove the baking sheet from the refrigerator and drizzle the melted chocolate over top using a metal spoon (see note). Sprinkle the sea salt and coffee grounds over the newly added chocolate.
- 6. Place the baking sheet in the refrigerator for at least 30 minutes to chill. Use a large chefs knife to cut bark into irregular pieces. Store the bark in the refrigerator until ready to serve.
