What kid doesnβt love slushies?
I canβt remember the last time I had a slushy but can guarantee it wasnβt homemade and was probably some crazy, artificial neon color. None of that here! Just look at that all-natural, deep purple color. Nothing artificial about this slush so you can feel good about sippinβ on one and serving it to kiddos.
One of my small projects for this spring is making my outdoor space a more comfortable gathering space. Itβs a very small space to work with, but Iβve upgraded the fold-up camping chairs to Adirondack chairs with bright pillows and added an outdoor storage bench (because more storage is always a good thing!). Once the temperature finally stops dipping to freezing at night, Iβll add some plants and hang some lights. So while I still have some time, Iβm perfecting my summer sips, like this slush, early! This recipe will make one large, 16-ounce slush, or you can split it with a friend. But ya know, sometimes a girl just needs a large, purple slushy all to herself π Iβll invite friends over for slushies next time once my outdoor patio is ready!
Ingredients
- 4 fluid ounces coconut water
- 4 ice cubes
- 1/2 cup frozen blueberries
- 1/4 cup fresh or canned pineapple chunks
- 1 tablespoon chopped ginger root
- 1/2 tablespoon fresh lime juice
Instructions
- Add coconut water and ice cubes to a blender and process until no large chunks of ice remain.
- Add blueberries, pineapple, ginger, and lime juice and blend to a slushy consistency. Enjoy immediately.
