Ginger Peach Overnight Oats
Has this month flown by or what? It’s time again for the monthly Recipe Redux challenge and this time we’re serving everything up in jars. Healthy food on-the-go!
I’m a little late to jump on the “overnight oatmeal” bandwagon, but I’m on now and won’t be jumping off anytime soon! If you’re like me, you save oatmeal for the colder months of the year and abandon it once spring/summer come around. But oatmeal is such a great, filling breakfast option, why should we part ways for half of the year? You no longer have to. Just follow these steps:
1. Put some oats in a jar along with a liquid and some other fun, flavorful ingredients
2. Put jar in refrigerator
3. Go to sleep
4. Wake up and eat your oats in a jar!
This recipe is mighty tasty if I do say so myself! The ginger in the yogurt really comes through and there’s just enough sweetness from the peach compote and the yogurt. The texture is different from oatmeal–the oats just become soft rather than mushy as in hot oatmeal. I can’t wait to try out more flavors! Ingredients:
1/2 cup old fashion oats
3.5 oz Chobani Bite® Honey with Ginger Greek yogurt (use any flavor you’d like!)
1/2 cup 2% milk (or your favorite dairy alternative)
2 tsp. chia seeds
1/3 cup peach compote (see recipe below)
Directions:
1. In a pint size jar, add oats, greek yogurt, milk and chia seeds.
2. Put lid on and shake jar really well. There shouldn’t be any oats sitting on the bottom after you shake it up!
3. Remove lid and add peach compote, then stir.4. Refrigerate overnight so the oats and chia seeds can absorb the liquid and soften. Feel free to add more peach compote before enjoying in the morning!
For Peach Compote:
2 peaches, skin removed and cut into small chunks
1 tsp cinnamon
1 Tbsp agave nectar
In a small saucepan over medium heat, add peaches, agave nectar, and cinnamon. Heat until peaches start to bubble, then reduce heat to medium-low and allow to cook for 15 minutes. Remove from heat and keep up to 5 days.

I have never made over-night oatmeal. I guess I am the very last to jump on. I love the inclusion of chia seeds. Been meaning to use them more in dishes.

Have made steel cut oats in the crockpot overnight, but never in a jar. Will have to try this. Your combinations sound delicious!
I love overnight oats! I make them pretty often, love the idea of a honey/ginger flavor- haven’t tried that variety!

Love me some overnight oats – haven’t made them in awhile with have to try out your combo – I tried the Chobani honey with ginger recently – it was really good.
