This recipe was created in partnership with Sprouts Farmers Market. Thank you for supporting brands that make The Nutrition Adventure possible!

Fall brings on some of my favorite fruits and vegetables: winter squash, Brussels sprouts, figs, and apples. What produce do you look forward to most in the fall? My friends at Sprouts Farmers Market are making the most of the season’s bounty of apples with an “Apple-anche” in the stores’ Produce Department. Pink Lady, Honeycrisp, Granny Smith, Gala, Fuji, Golden Delicious, and so many more delicious fall apples to enjoy!

Honeycrisp Apples

Honeycrisp apples have a great crunch and are mildly sweet. I love keeping them on hand for snacking but they also work well in baked goods. They were also the perfect match for the salty prosciutto in this recipe! Fun food fact: the Honeycrisp apple originated in Minnesota.

Apples provide the most nutritional value when left unpeeled since most of the nutrients are found in the skin. An apple is a good source of fiber and vitamin C, helping to keep the doctor away if eaten once a day!

How to Store Apples

Like most fruits, apples left out on the counter will ripen faster than if they are stored in the refrigerator. If storing apples in the fridge, be sure to keep them in a plastic bag. Apples give off a natural gas called ethylene, which can cause other fruits to ripen faster. Ever place an apple next to unripe, green bananas and find that the very next day, the bananas are ripened? That’s the ethylene gas at work!

Place those babies on a serving tray and watch how quickly they’ll be devoured. These Prosciutto Wrapped Apple Bites will make a great addition to the appetizer table this year! You could also make these as an easy snack if you have all of the ingredients on hand!

    1. You can add a touch of lemon juice if slicing apples in advance but I don’t recommend assembling these any more than 8 hours ahead of serving. Exposure to oxygen is what turns the apples brown so that’s somewhat minimized by topping them with the cheese, prosciutto and arugula and placing on a plate in the fridge, covered with plastic wrap!

  1. This recipe sounds wonderful but I was wondering “Don’t the apples turn brown if you make this appetizer in advnace.”

    1. Hi Linda,
You’re correct that the apples could brown but if exposed to oxygen for a period of time. I suggest that if you need to make them in advance, that you don’t do it more than 8 hours ahead of time, and that you keep the prepared Apple Bites in an airtight container in the fridge. This will help slow down any browning. Lemon juice wouldn’t be a good addition in this case to prevent browning because it won’t taste good with the other ingredients.

    1. Hi Kathleen–thanks for your question! Yes, eventually the apples will turn brown but this won’t be an immediate reaction. Browning occurs when the surface of the apple is exposed to oxygen, so that is slowed down when the apple is topped with cheese, arugula, and prosciutto. I was able to keep these prepared, in an airtight container in the fridge for up to 8 hours before the appearance changed. Hope that helps!

  2. I was hosting a get-together with some good friends and was looking through recipes for appetizers. This recipe caught my eye, and am I sure glad it did! This recipe is so delicate and delicious, perfect for a girl’s night!
