This is a reminder to take a step away during the work day for lunch and create a meal that excites & nourishes you! 

For me recently, it’s been this Mediterranean-inspired plate with fresh mozz + 🍅 and basil drizzled with @cobramestateusa EVOO (it’s delicious & high-quality). Then I added some olives, gigante beans, and marinated artichokes + garlic sourdough toast. 

Eating outside on summer days is my favorite ❤️ I usually try to leave my phone indoors so I’m not tempted to look at it while eating and instead just enjoy the mental break to recharge. Just like a mini vacation during lunch 😊

Growing up, we didn’t eat many salads at home and if we did, it was usually a pre-mixed iceberg salad mix + a few tomatoes & ranch dressing. So for a long time, I really didn’t go for salads because they weren’t enjoyable for me. 

This is my way of building salads now—swapping out different proteins & add-ins depending on what we have on hand and cravings. Like tonight, we’re making a similar salad but with steak 🥩 🤤 

I was reading a @reddit thread about different, more exciting names for salads to help them seem more enticing…would love to hear if you have any suggestions! My favorite from the thread is ‘Loaded Green Bowl’ because that is absolutely my goal when making entree-sized salads 🥗

Cut, scoop, and enjoy 🕺🏻 No need to remove the peel with a knife, which ends up wasting a lot of that delicious kiwi! Or, if you’re up for it, just bite into a kiwi with the peel on for a boost of fiber. It’s safe to eat (obvs wash it first) 🥝

We know plain Greek yogurt offers gut health benefits but I personally can’t eat it by itself 🙅🏻‍♀️ And really, we can maximize the nutritional benefits of this snack or breakfast option by pairing it with other foods 🙌🙌 

This little yogurt parfait is providing probiotics + protein + satiating fats from the Greek yogurt, fiber + antioxidants from the fruit 🫐🍌, and a hint of sweet from 🍯 to make it all taste delicious together! For crunch, sometimes I add a little bit of granola or nuts.
