Beans are a great, heart-healthy protein option and contain complex carbohydrates which help with blood sugar control. Stuffed mushrooms are usually filled with meat and cheese which means a lot of saturated fat and cholesterol in one small bite. Since there tends to be an abundance of heavy dishes at tailgating events and football parties, it’s smart to keep a balance among the party foods. 70 calories
5 grams fat [1 gram saturated]
4 grams carbohydrates [1 gram fiber]
2 grams protein
If you want to add a little crunch on top, crush up a few saltine crackers into a fine crumb and sprinkle over the mushrooms before baking. And if there’s a bit of the hummus filling leftover, use it as a sandwich spread or dip some veggies or chips into it!
Ingredients
- 24 baby bella mushrooms
- 1 cup kale finely chopped
- 1 clove garlic
- 3 tablespoons olive oil divided
- 2/3 cups Sabra® Supremely Spicy Hummus
- 2 tablespoons cilantro finely chopped (if desired)
Instructions
- 1. Preheat oven to 350°F. Clean mushrooms by gently wiping with a paper towel to remove any dirt. Remove stems from mushrooms caps and chop them very fine. Set aside. Place mushroom caps on a baking sheet.
- 2. Heat 1 tablespoon of the olive oil in a large skillet over medium heat. Once heated, add the mushroom stems, kale and garlic. Saute for 3 minutes, then remove from heat. Add the hummus to the skillet and mix well. Stir in cilantro if using.
- 3. Drizzle the mushroom caps on the baking sheet with the remaining 2 tablespoons of olive oil and toss to coat. Fill mushrooms with the hummus mixture using a spoon. Bake on the middle oven rack for 15 minutes. Place mushrooms on a serving tray and enjoy!
