Hi friends! I hope you all had a chance to enjoy some guacamole and tacos for Cinco de Mayo! It has been a gorgeous week in Nashville and I’ve been trying to soak up every drop before the 90°+ temps hit us. Is it feeling more like spring or summer where you live?

Lightly dressed and served cold, this is the perfect spring and summer side dish. It’s colorful, packed with fiber, vitamin A, vitamin C, and healthy fats, and lower in calories compared to mayonnaise-based potato salads. It’s satisfying enough that I made this my lunch one day rather than eating it as a side! This sweet potato salad would also be great on top of a spring mix salad or rolled up in a warm tortilla with salsa for a burrito.
Have you tried roasting sweet potatoes with chili powder? It’s an amazing flavor combination and a great way to add a kick of flavor! Of course, no fiesta salad would be complete without avocado, cilantro, and a touch a lime 🙂
