Pumpkin Latte Oats with Cranberries & Ginger Cookies

Have you had your fill of pumpkin yet? I’m not sure I could ever be tired of pumpkin, but I recognize that #pumpkinfatigue is real so this is the last recipe of the season featuring pumpkin. Maybe….

Adding pumpkin puree to oatmeal is one of my favorite ways to eat oats in the fall because it provides a boost of vitamin A + potassium, plus who can deny that gorgeous orange color? I’ve also made oats with brewed coffee before, but I’m thinking it’s something I should do more often.

But adding cookies to my oatmeal? This was a first!

Of course, Nairn’s Stem Ginger Oat Grahams aren’t the typical cookie. They’re made with uncontaminated, gluten-free oats, so they are safe for those with gluten-intolerance/allergy, and a serving of two cookies contains only 3 grams of sugar. I loved the ginger flavor, which pairs well with the pumpkin and cranberries in this recipe. Although Nairn’s is based in the UK, you can find their products in many stores around the United States and worldwide. Have you tried any of the Nairn’s products?

Pumpkin Latte Oats with Cranberries & Ginger Cookies

Ingredients

  • 1/2 cup gluten-free old-fashioned oatmeal such as Bob's Red Mill
  • 1 1/2 fluid ounces brewed coffee
  • 1 1/2 fluid ounces water
  • 1 fluid ounce milk or non-dairy milk
  • 3 tablespoons 100% pumpkin puree
  • 1 tablespoon dried cranberries
  • 2 Nairn's Gluten-Free Stem Ginger Cookies

Instructions

  • 1. In a small, microwaveable bowl, add oats, coffee, water, and milk. Place bowl in microwave and cook for 1 minute and 20 seconds.
  • 2. Carefully remove bowl from microwave and top with pumpkin, dried cranberries, and cookie pieces.
