Adding pumpkin puree to oatmeal is one of my favorite ways to eat oats in the fall because it provides a boost of vitamin A + potassium, plus who can deny that gorgeous orange color? I’ve also made oats with brewed coffee before, but I’m thinking it’s something I should do more often.
But adding cookies to my oatmeal? This was a first!
Of course, Nairn’s Stem Ginger Oat Grahams aren’t the typical cookie. They’re made with uncontaminated, gluten-free oats so they are safe for those with gluten-intolerance/allergy, and a serving of two cookies contains only 3 grams of sugar. I loved the ginger flavor, which pairs well with the pumpkin and cranberries in this recipe.
