Happy New Year, Nutrition Adventurers! How is 2017 treating you so far? It’s been a busy start to the new year over here, and I’m excited that my first blog post for the year is centered around my favorite meal of the day….breakfast!

If you’ve been reading this blog for a while, or if you personally know me, then you’re already aware of how adamant I am about starting the day with a good breakfast. My passion for breakfast runs deep. My family and I actually were actually discussing this very topic while I was home for the holidays. If I cross paths with a non-breakfast eater, I’ll do my best to convince them that breakfast is not a meal to be skipped.

3 Reasons You Shouldn’t Skip Breakfast 

  1. Better ability to focus at work or school –> after fasting for 6+ hours while sleeping, our bodies and brains are in need of glucose upon wakening for basic functioning, like learning and retaining information, and visual and spacial understanding.

Blueberry Cottage Cheese Parfait

Servings: 1 serving

Ingredients

  • 2/3 cup low-fat cottage cheese
  • 1 teaspoon cinnamon
  • 1/2 cup frozen blueberries thawed
  • 1/2 cup Post Shredded Wheat
  • 2 tablespoons shredded coconut flakes
  • 2 teaspoons chia seeds

Instructions

  • 1. In a small bowl, mix together cottage cheese and cinnamon.
  • 2. In a mason jar or glass, spoon 1/3 cup of the cottage cheese into the bottom. Top with 1/4 cup blueberries followed by 1/4 cup Shredded Wheat, 1 tablespoon of shredded coconut, and 1 teaspoon of chia seeds. Repeat the layers with the remaining ingredients. Enjoy!

  1. I never think of using cottage cheese in a parfait and that’s got to change. That Post Shredded Wheat red box reminds me of my childhood – didn’t like them as a kid but now am a shredded wheat lover!

    1. Sometimes it’s good to change it up! I never tried them as a kid but definitely enjoy them now.

  2. This looks really good but could I use yogurt instead of cottage cheese. I don’t like fruit with my cottage cheese

      Certainly! I would suggest a plain Greek yogurt for the additional protein and to keep the added sugars to a minimum. Enjoy!
